I like the thought that the college is making full use of their resources. :)
I wonder if the college sells the sap collected or processes it and uses it in their own dining room?
I remember coming home from ski weekends at Okemo and passing by a maple syrup shack. The trees all had buckets and when they started making the syrup, the smell was wonderful. I have to admit, there are things about New England I really miss.
